Blueberry Melomel

Ingredients:
5 gallon batch
- 12 lb. Wildflower honey
- 2 Lemons zest & juice
- 2 Oranges zest & juice
- 2 tbs. Pollen (yeast nutrient)
- 8 lb. Fresh blueberries
- Lalvin K1V-1116 yeast
Heat 1 gallon water too boiling with zest & juice, add pollen, Cool too 120-130F
and stir in honey. Siphon into fermentor with 3 gallons water, leaving solids
behind. Add active yeast starter when temp is 85F or less.
When fermentation slows (about 2 weeks) rack onto frozen, thawed, and crushed
blueberries. Rack too carboy after 2 weeks.

Sep. 09 2003 - Rack too 5 gallon carboy
Nov. 20 2003 - Racked sg. .998
Jan. 13 2004 - racked stabilized with 2tsp. sorbate .5 tsp. sulfite
sweetened with 1.5 lb black locust honey. sg. 1.010
February 01 2004 - bottled, sg. 1.009
