Holiday Berry
a cranberry raspberry melomel

6 gallon batch
Ingredients:
- 15 lb. light honey
- 5 lb cranberries frozen
- 6 lb raspberries frozen
- 2 Tbs pollen (yeast nutrient)
- Lalvin D-47 yeast
Heat 1 gallon water too boiling, add pollen. Cool too 120-130F and stir in honey
, pour into primary fermenter bucket with thawed and crushed berries. Add water
too 6 gallons, add yeast when cooled to 85F or below.Push down cap twice daily
for 1 - 2 weeks then remove berries and rack too a carboy.
Start sg. 1.082
Jan. 12 2004 - remove berries
Feb. 1 2004 - racked sg. 1.002
Mar. 17 2004 -racked
Jun. 14 2004 -racked
Aug. 21 2004 -bottled sg. 0.999
Didn't care for this one, to acidic.
