Oak/Vanila Split



Six gal. dry traditional mead,
split with oak in 1/2 and valina in the other 1/2.
A batch to test the taste of oak or vanila in traditional mead.

Start date: December 16, 2004
Bottle date: October 29 2005

6 gallon batch
Ingredients:
Heat 1 gallon water, tea, lemon zest & juice too Boiling. Reduce heat, add pollen
and simmer 10 minuets. Remove from heat, cool too 125F and stir in honey siphon
into 6 gallon carboy leaving solids behind, add water too 6 gallons, add yeast
when cooled to 85F or below.

Start sg. 1.090

Feb. 03, 2005   - Racked, sg. 1.001
May. 14, 2005   - Racked too two 3 gallon carboys, sg. 0.998
    1 - added 2/3 cup medium toast french oak chips
    2 - added 3 oz. vanila extract
Aug. 16, 2005   - Racked, sg. 0.998, both are very good so far
Oct. 27, 2005   - Bottled oak half. Good taste, I like what oak did for it
Oct. 29, 2005   - Bottled vanila half. very good
Oct. 29, 2008   - vanila, aged nicely, WOW this is good!
Oct. 29, 2008   - oak, aged nicely, verry verry good.
