Semi Sweet Mead
A lightly sweet traditional mead

Bottle date: May 30, 2004
5 gallon batch
Ingredients:
- 12 lb. light clover honey
- 5 lemons, zest & juice
- 1 cup strong brewed tea
- 2 Tbs. pollen (yeast nutrient)
- 1 packet Lalvin KV1-1116 yeast
Heat 1 gallon water, tea, lemon zest & juice too Boiling. Reduce heat, add pollen
and simmer 10 minuets. Cool too 120 - 130F and stir in honey, pour or siphon into
bucket or carboy leaving solids behind, add water too 5 gallons, add yeast when cooled
to 85F or below. 2 weeks before bottling stabilize with potassium sorbate and sulfite,
sweeten to taste.
