Semi Sweet Mead



A lightly sweet traditional mead

Start date: December 24, 2003
Bottle date: May 30, 2004

5 gallon batch
Ingredients:
Heat 1 gallon water, tea, lemon zest & juice too Boiling. Reduce heat, add pollen
and simmer 10 minuets. Cool too 120 - 130F and stir in honey, pour or siphon into
bucket or carboy leaving solids behind, add water too 5 gallons, add yeast when cooled
to 85F or below. 2 weeks before bottling stabilize with potassium sorbate and sulfite,
sweeten to taste.

Feb. 1, 2004   - Racked, sg. 1.003
Mar. 17, 2004 - Racked
May. 05, 2004 - Racked, sg. 1.000 - added sorbate, sulfite, and 10 oz. honey
May. 30, 2004 - Bottled
