A dry traditional mead
Start date: November 13, 2001
Bottle date: September 15, 2002
3 gallon batch
Ingredients:
- 7.5 lb. light clover honey
- 3 lemons, zest & juice
- 1/3 cup strong brewed tea
- 1 Tbs. pollen (yeast nutrient)
- 1 packet Red Star premier cuvee
Heat 2 quarts water, tea, lemon zest & juice too Boiling, reduce heat. Add pollen
and simmer 10 minuets. Remove from heat,cool too 125F stir in honey, pour or siphon
into 3 gallon carboy leaving solids behind, add water too 3 gallons. Add yeast when
cooled to 85F or below.

Jun. 11, 2002 - Racked, sg. 0.998
Sep. 15, 2002 - Bottled
Nov. 30, 2002 - mellowing out nicely, will be better with more aging
Sep. 18, 2003 - a very nice mead, last bottle ;(
