A dry traditional mead
Start date: January 4, 2003
Bottle date: December 6 2003
5 gallon batch
Ingredients:
- 12 lb. light clover honey
- 5 lemons, zest & juice
- 1/2 cup strong brewed tea
- 2 Tbs. pollen (yeast nutrient)
- 1 packet Red Star premier cuvee
Heat 1 gallon water, tea, lemon zest & juice too Boiling, reduce heat. Add pollen
and simmer 10 minuets. Remove from heat,cool too 125F stir in honey, pour or siphon
into 5 gallon carboy leaving solids behind, add water too 5 gallons. Add yeast when
cooled to 85F or below.
